Regarding your YT videos, I put on my headphones and to my surprise I heard a pretty well defined, clean sound. I think the video quality of your phone is better than the quality of my cheap and crappy camera.

It's remarkable how good camera video quality has gotten in the ten years since the first time I had a phone with a 1.2 mega pixel camera that had a burst limit of 15 seconds - now they've got better resolution than the first camera I used for video production - in fact someone recently shot an entire feature length film using iPhones.
I listened in headphones it does sound better than I thought (at least the audio quality does… - if anything I think I pulled my amp too close after I tried it out a couple of times and couldn't hear it very well from my dinky little phone speakers instead of headphones - duh. Oh well, lessons for next time. The other problem I ran into that night was that I use an app on my phone for backing tracks, which doesn't work when video is recording, so that'll be my excuse for getting out of time, but that's an easy fix - just use an app for my laptop…as for my sloppy playing, I have no valid excuse.
But I think your cheap and crappy camera does the job you're asking of it just fine!
